Pasta

In my cooking I have created a pasta recipe that I thought I'd share for those of you who might be interested. (Serves 4-6 as a main dish).

1 lb. pasta
3-4 chicken breasts (more if you want)
1 16 oz. can diced tomatos (undrained)
4 tbs. balsamic vinegar (more if you like)
1/8 c. olive oil
1 tsp. each oregano, italian seasioning, sage, thyme, ground pepper (or pretty much any spice you think might be good and as much as you want - mine changec everytime I make this).

Mix spices, tomatos, oil and vinegar; set aside. Cook pasta according to directions (f the chicken is uncooked you can cheat and boil it with the pasta untill it too is cooked). Chop or shred the chicken (I prefer to shred but I chop when I need to take less time). Mix pasta, chicken and tomato mixture.

This is easy to make ahead and either re-heat or eat cold, it's also better next-day because the pasta and chicken have had a chance to absorb the juices. Some people have commented that this would also be good with mozzerella cheese on top but I've not done that.
